Grilled Yellow Peaches With Gorgonzola Dolce, Arugula, & Pistachios With Champagne Vinegar

-4 Ripe Yellow Peaches

-Gorgonzola Dolce (6 oz)

-Shelled, Crushed Pistachios (a handful)

-Arugula (a big handful)

-Olive oil (a few Tbsps)

-Salt, Pepper

-Champagne Vinegar (a few Tbsps)

-Chopped mint leaves



Cut peaches in half and remove pits. Lightly brush with olive oil. Season with salt and pepper. Grill peaches cut side down over medium heat for about 3 to 4 minutes then flip over and grill for another two minutes.. Peaches should be soft but not falling apart. Scoop a tablespoon or so of the Gorgonzola into the peaches where pit was. Scatter some cheese around the plate too. Mix the arugula with a bit of the olive oil and scatter over peach and plate. Drizzle more olive oil and the Champagne vinegar all over the peaches and plate. Scatter the pistachios everywhere. Garnish with the mint. Devour!
