Ingredients for 8 servings

Ingredients

4 chicken breasts, cooked, chilled, and chopped

1/2 c dried currants

1/2 c raw sliced almonds, chopped

1 c celery, chopped

1/2 c red grapes, chopped

3/4 c organic olive oil mayo

3 T turmeric powder

3 T curry powder

kosher salt, to taste

cracked pepper, to taste

Preparation

1.

1. Roast chicken breasts, remove skin, chill fully, and then chop into small pieces. Sometimes I boil the chicken as well. 2. Chop up the almonds, celery, grapes, and scallions. 2. Add all ingredients into a bowl and mix thoroughly until combined.
