4 large free-range organic eggs

400 g Tipo 00 pasta flour

2 large shallots, very finely diced

6 large cloves of garlic, finely minced

2 long red chilli, de-seeded & very finely diced

2 large lemons

Large handful fresh mint leaves, finely chopped

1 teaspoon dried chilli flakes

Olive oil for cooking

Sea salt flakes & freshly ground black pepper
