Ingredients for 6 servings

2 lb fresh cherries, rinsed, stemmed and pitted

juice of one large lemon

4 tbsp sugar, or to taste (adjust for sweetness of your cherries, but avoid over-sweetening as topping is quite sweet)

1 cup finely ground almonds

8 tbsp unsalted butter, softened

2 x large eggs

2 tbsp heavy or double cream

1/4 tsp salt

1 cup powdered/icing sugar, unsifted

Several drops of almond extract (to taste)

Powdered/icing sugar for dusting the gratin
