1 bay leaf

0.25 t black peppercorns

2 sprigs fresh thyme

4 sprigs fresh parsley

3 c milk

0 kosher salt as needed

1 lb dried lasagna noodles (about 20 pieces)

0.5 c canola oil, or similar

0.5 c fresh sage, leaves only

2 lb butternut squash, peeled, halved lengthwise, seeded and sliced thinly crosswise

0.25 t cayenne pepper (to taste)

0 ground black pepper (to taste)

1 lb whole milk ricotta cheese

0.5 c fresh parsley, leaves only, minced

3 T good unsalted butter

1 clv garlic, peeled and minced

1 small onion, halved and thinly sliced

3 T all purpose flour

0.25 t freshly grated nutmeg

0 cooking spray

1 c parmesan cheese, freshly grated plus more for passing
