150 g cooked smoked ham knuckle meat flaked

6 cooked new potatoes, cut inhalf

1 small onion, sliced or diced

clove of garlic, crushed

Maldon Sea Salt and freshly cracked black pepper

2 spring onions, sliced

10 small cornishons, chopped

Zest and juice of one lemon

1 tbs chopped mixed herbs such as chervil, chives, rosemary, thyme and tarragon
