1 large Yukon gold potato, peeled and cut into 1/2-inch pieces (about 1/2 pound)

1 1/2 tablespoons olive oil

1 cup chopped onion

1/2 cup diced red bell pepper

1/4 cup diced celery

1 cup frozen whole-kernel corn, thawed

2 cups vegetable broth

1 cup 1% low-fat milk

3/4 cup shelled edamame

2 tablespoons chopped fresh parsley

2 teaspoons chopped fresh chives

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

Fresh chives (optional)
