A whole duck of approximately 1 kg

200 gr sausage meat

12 clementines

2 candied tangerines

100 ml orange liqueur

100 gr butter

4 shallots

50 gr of bread (the crumb, or as we call it in Maltese 'il-qalba')

100 ml milk

50 ml sherry vinegar
