1 large onion, chopped

2 cloves garlic, minced

3 medium carrots, peeled and cut into 1/2-inch dices

1 red bell pepper, seeded and cut into 1/2-inch dices

29 ounces hominy, white or gold, drained and rinsed

2 tablespoons tomato paste

4 tablespoons peanut butter, smooth

1/2 8.25 oz. jar prepared mole, can be found in the Latin section of the grocery store

1 teaspoon ground cumin

1 teaspoon dried oregano

1/2 teaspoon chili powder

1/2 teaspoon ground cinnamon

3 14.5 oz. cans chicken broth

sour cream, optional garnish

fresh chopped cilantro, optional garnish

warmed corn or flour tortillas, optional garnish
