1 kg clams, soaked and drained

1 tablespoon olive oil

100 g bacon or speck, chopped

1 onion, chopped

4 cloves garlic, extra, crushed

2 bay leaves

1 kg sebago (starchy) potatoes, peeled and chopped

⅓ cup (80ml) white wine

3 cups (750ml) fish stock

1 ¼ cup (310ml) milk

¼ cup (60ml) single (pouring) cream

chopped dill sprigs and lemon wedges, to serve
