19 Ingredients

  • 12 ozs good-quality pork sausage meat
  • 3 shallots , peeled and finely chopped
  • ½ tsp ground nutmeg
  • 1 Tbsp unsalted butter
  • 1 egg , preferably free-range or organic
  • A large handful of dried cranberries
  • 3 ¼ cups dry cider
  • 6 slices good-quality bacon , sliced into thin strips
  • Sea salt and freshly ground black pepper
  • A sprig of fresh rosemary , leaves picked and chopped
  • 1 turkey (about 9 lbs), preferably free-range or organic
  • 2 sticks of celery , trimmed and finely chopped
  • 2 big handfuls of breadcrumbs
  • Zest of 1 orange
  • A handful of chopped walnuts
  • ½ cup softened butter
  • 1 tsp cornstarch
  • 1 cup plus 2 Tbsps of fresh chicken stock , preferably organic
  • ½ tsp ground allspice
