1/3 cup chopped celery

1 1/2 cups chopped onions

3 cups plus 1/4 cup all-purpose flour

1 tablespoon black pepper

2 tablespoons garlic powder

1 tablespoon dried thyme

3/4 pound lean ground pork

1/4 teaspoon salt

1 large or 2 small baking potatoes, peeled, thinly sliced, and blanched

2 tablespoons salt

2 tablespoons finely chopped parsley leaves
