3 tbsp Unsalted Butter

1 tsp Caraway Seeds

1 x medium onion, finely chopped

3 x celery ribs, finely diced

1/2 cup coarse fresh rye bread crumbs, with or without seeds

1/4 cup chopped fresh flat leaf parsley

3 tbsp dried currants

Kosher salt and freshly ground black pepper, to taste

6 x FOR THE CHICKEN AND PAN SAUCE --- skinless boneless chicken breast halves

11/2 tbsp Vegetable Oil

2 tsp all purpose four

1 cup unfiltered apple cider

1 cup Chicken broth
