Ingredients

6 oz. Nabisco® Famous Chocolate Wafers (about 30 cookies)

5 Tbsp. unsalted butter, melted

1 1/2 cups whole milk

1/2 cup heavy cream

1 vanilla bean, split in half lengthwise

6 large egg yolks

1/2 cup granulated sugar

1/8 tsp. kosher salt

2 Tbsp. cornstarch

1 1/2 cups sweetened, shredded coconut, toasted, plus more for garnish (see Love Note 1)

4 Tbsp. (1⁄2 stick) unsalted butter

2 Tbps. coconut rum, such as Malibu

1 1/2 cups cold heavy cream

1 tsp. pure vanilla extract

1/4 cup confectioners’ sugar
