4 pounds tomatoes, cored and cut in half

1 small red onion, peeled

6 garlic cloves, peeled and cut in half

2 sprigs fresh basil

1/2 teaspoon salt, plus more to taste

4 Gypsy peppers or small bell peppers (preferably red, orange and yellow)

2 tablespoons olive oil + more for grilling

6 fresh sweet Italian-style pork sausages (about 1 1/2 pounds)

6 small eggplants (1 1/4 pounds total), stemmed and cut in half lengthwise

Salt to taste

Basil sprigs for garnish (optional)


5 cups water

1 teaspoon salt

1 1/4 cups polenta

2 tablespoons butter

1/2 cup freshly grated Parmesan cheese
