olive oil, as needed

Several strips of orange zest

4 large shallots

Kosher salt, to taste

red wine vinegar, to taste

Garnish:

Maldon salt and freshly grated pepper, to taste

Couple handfuls pepper cress

chervil, optional garnish

Extra virgin olive oil to drizzle

1 to 2 ounces ricotta salata, coarsely grated
