1/4 cup sweet rice flour (1.25 oz / 35 g)

1 tsp Xanthan Gum

2 tsp Baking Powder

1/2 tsp Salt

2 x eggs at room temperature

1 cup Sugar

1/2 cup Olive Oil or grapeseed oil

1/2 cup Orange Juice

1 tsp Zest of 1 orange
