Yum, we are going to have to work up to the full chipotle spice! Really great and all the additional meal ideas took us through the weekend. Well worth making extra.

5 pounds boneless, skinless chicken breasts (about 8 breasts), each cut in half

1 1/2 c buttermilk

1/4 to 1/2 c Chipotle peppers in Adobo sauce (Add according to how much heat you like.)

1 t ground cumin

1 t ground coriander

1 t kosher salt

1 handful fresh cilantro, stems and leaves

Zest and juice of 1 large lime
