Marie's Easy Coconut Curry

Ingredients

2 tbsp oil

1 onion, finely chopped

1 yellow pepper, finely chopped

1 garlic clove, crushed

1 tbsp curry paste

1 inch ginger, peeled and grated

1 red chilli, finely chopped

400 ml coconut milk

Fillings:

Choose from some of the following:

700 g white fish

1/2 cup green peas

1 potato chopped

1/2 head broccoli

cashew nuts

carrots

tofu

asparagus

snowpeas

aubergine

Preparation

1.

1. Cook any veggies in water until soft. 2. heat oil, cook onion, pepper and garlic until soft. 3. add curry paste, ginger and chilli and cook for another month 4. Add coconut milk and bring to boil 5. Stir in fish or veggies. Transfer to slow cooker 6. Cook for 1 hour on high then 30 mins on medium or until ready to eat.
