2 fryer chickens, about 3 pounds each

2 cups vegetable oil or solid vegetable shortening, or as needed

Spice Mixture:

1 teaspoon paprika

1 teaspoon ground red chile (New Mexico or ancho)

2 teaspoons granulated garlic

1 teaspoon granulated or powdered onion

Pinch celery salt

2 tablespoons kosher salt

2 teaspoons pepper

Coating:

2 cups flour

1 1/2 teaspoons salt

1/2 teaspoon pepper

2 cups buttermilk
