  • ¾ tsp wasabi  powder
  • 1 tsp finely diced scallions  (from white and light green parts only)
  • 2 tsps fresh lemon juice , plus ½ lemon
  •  1 lb sushi-quality tuna1 Tbsp plus 2 tsps thinly sliced fresh coriander
  • ¼ cup corn oil
  • 1 ripe  tomato , peeled, seeded, and cut into 1/8-inch dice
  • Fine sea salt , to taste
  • Freshly ground white pepper , to taste
  • 1 tsp peeled and finely diced fresh ginger
  • ½ tsp seeded and finely diced jalapeno
  • ½ tsp toasted sesame seeds
  • 20 best quality potato chips
