The pastry cream:

1 cup whole milk

1/4 cup granulated sugar

1 vanilla bean

3 large egg yolks

2 tablespoons flour

2 tablespoons unsalted butter

The tart dough:

2 1/2 cups all-purpose flour

1/8 teaspoon salt

2/3 cup granulated sugar

8 ounces (2 sticks) unsalted butter, chilled and cut into 1/4-inch slices

1 large egg

1 teaspoon vanilla

The strawberries & glaze:

2 tablespoons powdered sugar, optional

1 to 1 1/2 pints strawberries, depending on size and shape of fruit, halved

1/3 cup strawberry jam or jelly, red currant jelly, or sieved red cherry jam

2 teaspoons water

1/4 teaspoon rose water, optional
