Ingredients for 4 servings

1.0 loaf Italian bread, such as ciabatta, thinly sliced

2.0 tbsp olive oil, plus extra for drizzling

sea salt

2.0 garlic cloves, thinly sliced

finely grated zest of 1 lemon

2.0 x 400g tins cannellini beans, drained and rinsed

80.0 ml chicken or vegetable stock

extra-virgin olive oil to drizzle

6.0 slices prosciutto

125.0 g parmesan cheese, broken into chunks

2.0 large handfuls of flat-leaf parsley, finely shredded

1.0 small handful of mint leaves, finely shredded

1.0 brown shallot, finely diced

90.0 ml extra-virgin olive oil

60.0 ml lemon juice

6.0 good-quality anchovy fillets in oil, finely chopped

2.0 tbsp capers, rinsed, dried and chopped
