1/2 lb shredded swiss cheese

salt (to taste)

2 tablespoons chopped fresh garlic

2 cups diced onions

1/2 cup flour

2 quarts milk

1 (12 ounce) bottle wisconsin beer (Jaysun recommends New Glarus Spotted Cow, but may substitute a slightly fruity flavored ale)

1/2 lb shredded cheddar cheese

1/2 lb butter

1/2 lb shredded jalapeno jack cheese

1 dash nutmeg

2 bay leaves

black pepper (to taste)
