Ingredients for 4 servings

4 tablespoons extra virgin olive oil

1 large onion, chopped

3 cloves garlic, crushed

350 ml /12fl oz vegetable stock

2 medium aubergines, diced

2 courgettes, sliced

1 green pepper, de-seeded and sliced

1 red pepper, de-seeded and sliced

4 oz fresh or frozen peas

4 oz french beans

450 g /1lb Anya potatoes, cut into 2 cm pieces

2 tablespoons dried rosemary

½ teaspoon cinnamon

½ teaspoon ground cumin

1 teaspoon paprika

2 x 400g tins tomatoes

Freshly ground black pepper

A few green of black olives to garnish

A handful of freshly chopped parsley to garnish
