7 Ingredients

  • 1 tsp orange zest
  • 2 Tbsps fresh orange juice
  • 2 tsps white-wine vinegar
  • 1 Tbsp extra-virgin olive oil
  • 1/2 tsp sugar
  • Coarse salt and ground pepper
  • 1 lb beets, very thinly sliced on a mandoline or with a vegetable peeler

“When I was younger, I thought beets were absolutely awful. However, I've gotten the chance to eat them when the person knows what to do with the beets so that the flavour isn't lost, well they are very good. Will be having this with fish for dinner on Monday.”
