6 stalks asparagus, cut into 1-inch pieces

2 cups cooked wild rice (prepared according to package directions)

1 cup cooked basmati or other long-grain rice (prepared according to package directions)

1 raw beet, peeled and cut into matchsticks (or shredded)

1 handful chopped arugula (about 1/4 cup)

1 stalk celery, finely chopped

1 scallion, thinly sliced

1 orange, peeled, segments cut out

1/4 cup toasted walnuts, coarsely chopped

2 tablespoons finely crumbled ricotta salata

2 tablespoons chopped fresh dill

The dressing

2 tablespoons freshly squeezed lemon juice

2 teaspoons white wine vinegar

1 garlic clove, minced

1 tablespoon minced thyme

-- Salt and freshly ground pepper

3 tablespoons walnut oil

1 tablespoon extra virgin olive oil

1 tablespoon plain yogurt
