Ingredients

3/4 cup quick-cooking barley

Salt and pepper to taste

1 pound medium shrimp, cooked

cooked kernels from 2 ears corn or 2 cups frozen corn, tahwed in the microwave 1 to 2 minutes

1 red bell pepper, seeded and chopped

1 green bell pepper, seeded and chopped

1/4 cup chopped red onion

1 papaya, peeled, seeded, and cut into 1/2" dice

1/4 cup chopped fresh cilantro, or 1 tablespoon dried

1/3 cup olive oil

1/4 cup fresh lime juice

8 cups baby spinach
