1 small bunch of flat-leaf parsley , roughly chopped

140.0g baby spinach leaves

4 tbsp olive oil

150.0ml white wine

2 shallots , finely chopped

1 small lemon , thinly sliced

250.0g pack cherry or plum tomatoes , halved

140.0g shiitake mushrooms , quartered

250.0g puy lentils

2 tbsp capers , rinsed

4 x brill fillets, skinned (about 140-175g/5-6oz each)
