2 teaspoons Dijon mustard

3 cups torn Boston lettuce

2/3 cup grated sharp Cheddar cheese

3 tablespoons red-wine vinegar

Dressing

1/4 cup chopped walnuts

1 tablespoon extra-virgin olive oil

1 tablespoon honey
