500.0ml beef stock or consomme

300.0g bag of small shallots , trimmed and peeled

175.0ml red wine

1.0 tbsp thyme leaves

1.0 tbsp plain flour

FOR THE GRAVY

2.0 tsp English mustard powder

1½ kg piece of sirloins , trimmed but not rolled

FOR THE CRUST

3 large handfuls parsley leaves
