2/3 cup pitted Kalamata olives

1 teaspoon dried basil

2 tablespoons finely chopped mint

9 tablespoons extra virgin olive oil

4 small Yukon gold potatoes, boiled until tender, peeled and sliced (optional)

2 cloves garlic, finely chopped

1 cucumber, peeled and sliced

2 ripe tomatoes, quartered

2 tablespoons brined capers

4 cups baby spinach

1 pound cubed lamb sirloin
