Ingredients for 4 servings

1/3 cup pimento , chopped (or to taste)

1 (14 ounce) can canned corn niblets , drained (can use 2 cans if desired)

1 cup half-and-half cream or milk

1 1/2 cups crushed saltine crackers (Ritz crackers will do also)

salt and pepper

1 (14 ounce) can cream-style corn

3 cups grated cheddar cheese

1 small green bell pepper (cut into strips)

1/4 cup melted butter

garlic powder (optional)

1/2 cup buttermilk

2 eggs , beaten

2-3 tablespoons grated parmesan cheese
