Made this with lamb sausage from whole foods, a bunch of veggies we had in the fridge (the inside of the squash, carrots, tomatoes), leftover brown rice, parmesian cheese and fresh basil. Next time I want to use a larger squash, and try a vegetarian protein like tofu. I think it would also be good as a sweet dish with cinnamon as the main spice.

Ingredients

1 Cup Grain + 1/2 Cup Meat/Other Protein + 1 Cup Veggies + 1-3 Teaspoons Herbs/Spices

1 squash, grapefruit- to cantaloupe-sized (1-3 pounds)

1 cup cooked grain

1/2 cup cooked meat or other protein

1 cup cooked vegetables

1-3 teaspoons herbs or other spices

1/4 cup extras, like nuts or dried fruit
