1 cup dried appaloosa, calypso, pinto, or cranberry beans, sorted and rinsed

1/2 teaspoon dried thyme, crushed

2 tablespoons canola oil

5 cloves garlic, minced

1 large onion, chopped

1 large red bell pepper, chopped

1 habanero or scotch bonnet chile pepper or 2 jalapeno chile peppers, seeded and minced (optional)

3 cups chicken or vegetable broth

1 large sweet potato, peeled and cut into 1" chunks

1 tablespoon minced fresh ginger

2 teaspoons turmeric

1 teaspoon paprika

1 teaspoon ground coriander

1/4 teaspoon salt

2 cups fresh or frozen corn kernels

1 can (5 1/2 ounces) pineapple tidbits packed in juice

lime wedges (optional)
