These were a big hit at a daytime party that I hosted. I used two very large onions with a small splash of sugar and was able to spread it out to four naan breads and two personal size gluten-free pizza crusts from Whole Food ($7.99 for 4 crusts, cooked at 375 for about 15 minutes). I increased the goat cheese and basil accordingly to make six total flatbreads. All of my guests liked these and it was the first item to run out from my spread. I didn't try the gluten-free but my guests reported they were awesome. I will definitely make this recipe again. Super easy to prepare, just need to be patient and get a full caramelization on the onions, but so delicious!

Ingredients

1 tablespoon olive oil, plus more for brushing on the bread

2 yellow onions

1 teaspoon salt

freshly ground pepper

1 teaspoon sugar

4 flatbreads or pieces of Indian naan

4 ounces goat cheese

large handful of fresh basil leaves, sliced into ribbons
