4 bell peppers (a mixture of red, yellow and orange), seeded and cut into 1/2-inch dice

1 small red onion, cut into 1/2-inch dice

3 garlic cloves, sliced

6 Tbs. olive oil

Salt and freshly ground pepper, to taste

2 Tbs. sherry vinegar

2 tsp. smoked paprika

1 lb. medium shrimp, peeled and deveined

6 green onions, thinly sliced

1/2 lb. fusilli, cooked until al dente

2 Tbs. minced fresh flat-leaf parsley
