Ingredients for 4 servings

1 lemon, juice only

200 g /7�¼oz Puy lentils, cooked according to packet instructions

For the curried lentils

1 garlic clove, peeled, finely chopped

3 tomatoes, peeled, seeds removed, diced

2 tbsp chopped fresh coriander

salt and freshly ground black pepper

300 ml /10�½fl oz chicken stock

200 g /7�¼oz monkfish, trimmed, thinly sliced

1 tsp mild curry paste

1 tbsp chopped fresh coriander, to serve

50 ml /2fl oz olive oil

2 cm /1in piece fresh root ginger, peeled, grated

2 tbsp cr�¨me fra�®che

1 carrot, peeled, finely diced

1 celery stalk, finely diced

1 leek, trimmed, finely diced
