2 small zucchini

1 large shallot, minced (a generous tablespoonful)

1 1/4 cup all-purpose flour + more to dust cheese

1/4 cup yellow cornmeal

1/2 teaspoon baking powder

Salt as needed

Black pepper to taste

2-3 ounces mild Gruyere or Parmesan cheese, grated (optional), see note

3/4 cup whole milk

1 large egg

1 tablespoon melted butter

1/4 teaspoon hot sauce or to taste

1/2 cup creme fraiche, sour cream or plain yogurt lightened with milk (optional)
