Ingredients for 4 servings

1/2 cup crumbled feta cheese

1/4 cup purslane leaves

4 flour tortillas

olive oil spritz

Preparation

1.

Preheat oven to 350 degrees

2.

Spray muffin pan with olive oil

3.

Cut tortillas to size for muffin cup holders

4.

Press tortillas into muffin cups

5.

Spritz tortillas with olive oil

6.

Fill each one (1/4 way) with feta cheese

7.

Sprinkle purslane leaves on top

8.

Bake for 10 to 15 minutes
