3 Tablespoons fresh lemon juice

1/4 cup olive oil

salt & pepper

1/2 cup quinoa

1 cup chicken broth (or water)

1 green onion, sliced

10 jumbo shrimp

1 bag salad mix (I used Spring Mix)

1 cup cantaloupe cubes

1 cup blueberries

2 Roma tomatoes, chopped

1/4 cup chopped fresh herbs (chives, mint, basil, parsley)
