  • 1/2 oz dried porcini mushrooms
  • 3 cups chicken broth (low-salt canned broth is acceptable)
  • 6 Tbsps unsalted butter
  • 3 Tbsps olive oil
  • 1/4 cup minced onion
  • 1 1/2 cups Arborio rice
  • 1/2 cup Chardonnay
  • 1/2 lb fresh white mushrooms (or golden chanterelles, portobello, shiitake or a combination)
  • 1 small garlic clove, minced
  • Salt and freshly ground pepper to taste
  • 1/2 cup chopped Italian parsley
  • 6 Tbsps grated Parmesan or Asiago cheese
