2 x squid hoods

200 g fresh raw prawns, shells

1 x salmon fillet

12 x dried shiitake mushrooms

100 g fresh shiitake mushrooms

100 g fresh enoki mushrooms

100 g fresh oyster mushrooms

150 g bean shoots

1 x Lebanese cucumber

1/2 x red bell pepper, deseeded and finely diced

1 x carrot, grated

2 x spring onions

200 g green tea soba noodles


1/4 cup light soy sauce

1 tbsp sesame oil

1 tbsp Dried chilli flakes

2 tsp caster sugar

2 x cloves garlic, crushed

1 tsp freshly cracked pepper

Salad Dressing

2 tsp toasted sesame seeds

2 tbsp lemon juice

2 tbsp rice vinegar

1 tbsp fish sauce
