4 cups red potato - cubed
5 bacon slice
4 hard-boiled eggs
1/4 cup green pepper chopped
1/2 cup minced onion
1/2 cup mayonnaise
1 tbsp mustard
2 tbsps bacon drippings
1 tsp celery salt
salt and pepper
Cube potatoes, then boil until a fork pierces it easily (10-15 mins) - but not too soft. You know how you like potato salad! let cool
Hard boil eggs. Let cool in pot of cold water.
Cook bacon in pan until crispy then pat dry with paper towels. Reserve 2 tbsp of bacon grease. Yuuuum! #FatKidsRejoice
Mince onion and pepper. Chop bacon and hard boil eggs. Combine in bowl with potatoes, celery salt and bacon grease.
Add mustard and mayonnaise. Add the mayonnaise a little at a time until desired consistency. You can't undo too much mayo :)
Add salt and pepper to taste.
Gently mix - not too aggressively or things will get mushy. Cool in fridge for 2-3 hours before serving.
