3 x organic leeks, white & light green parts only, cleaned & thinly sliced

juice of 1 organic lemon

1 tsp freshly grated zest

1 tbsp organic olive oil

1/4 cup white wine (optional)

3 sprigs organic thyme

salt and pepper

6 x organic plum tomatoes (or 2 1/2 cups cherry tomatoes)

2 handfuls organic pitted kalamata olives

4 x cod fillets, 6-8 oz and about 1″ thick each
