1.25 kg potatoes, cut into 2cm cubes

500.0 ml chicken stock, made with 1 stock cube

2.0 tbsp olive oil

2.0 garlic cloves, peeled, 1 left whole, 1 finely chopped

0.5 bunch spring onions, washed and sliced

300.0 g peppers, sliced

70.0 g Spanish chorizo, each slice cut into 4

2.0 tsp mild chilli powder

400.0 g tin peeled tomatoes

4.0 medium free-range eggs
