1 whole chicken
7 stalk of scallions
2 Thumb sized Gingers Bruised
4 clove of garlic
1 Carrot roughly chopped
2 tbs of Salt
Wash the chicken and drain well
Put carrot into the big pot and 2 tbsp of salt
Stuff the chicken with 5 stalks of scallions and gingers. Scrub the salts and rub it all over the chicken. (Make sure chicken is submerged)
In with the chicken, boil for about 40 - 45 mins.
Once chicken is cooked, transfer it onto the a big pot with cold water. Submerge for 10 mins.
Keep the broth and use it to cook the rice.
Cook the rice with crispy garlic and a bit of gingers.
