1 cup brown rice couscous (or regular)

1 smallish red onion, thinly sliced

1 T Fustini

1/4 t sea salt

1/2 t ground cumin

1/2 c parsley

1 c cilantro

2 T dill

2 T mint

6 T Fustini

1 c pistachios, toasted and roughly chopped

3 green onions, finely sliced

1 fresh green chile, finely sliced

1 1/2 c arugula

A generous handful of extra herbs, roughly chopped

Juice of one lime

Greek yogurt, optional
