  • 2 large eggs
  • 1 1/2 cups grated sharp or aged cheddar, divided
  • 2 Tbsps finely chopped chives
  • 1 Tbsp baking powder
  • 1/2 cup milk (plus 2 Tbsps for brushing over scones)
  • 1 tsp salt
  • 2 cups unbleached all-purpose flour, more for rolling out biscuits
  • 6 Tbsps (3/4 stick) cold unsalted butter
  • 1/2 tsp black pepper
