1 medium onion, chopped

1 clove garlic, minced

1/2 teaspoon red chili flakes

1/2 teaspoon turmeric

1/4 teaspoon coriander

1/4 teaspoon cumin

1/4 teaspoon cinnamon

1 tablespoon apricot preserves or tomato paste (pick your pleasure)

extra handful of golden raisins (optional)

1 tablespoon vegetable or olive oil

salt and pepper to taste
